The almond tree, the herald of spring and the first blossoming tree, has been the subject of many legends in mythology. The fact that it was the first tree to colour the nature, which was buried in a dead silence and colourlessness by the cold winter season, with its blossoming flowers has placed the almond tree at the centre of many stories in mythology.
Edirne Almond Paste, one of our Geographical Indication values dating back to the Ottoman Palace Cuisine, is obtained by drying and grinding hard-shelled and plump Hacı Alibey (48-5) variety almonds growing wild in Edirne and mixing them with syrup.
The yield of Hacı Alibey (48-5) variety almonds, which grow in Edirne and have almost no tendency to periodicity, is between 33-38% and double yield is between 22-27%. Hacı Alibey (48-5) variety, which forms medium strong trees, is early and the length of the inner almonds is 22-27 mm and the width is 10-15 mm. Shelled almond weight is 3-4 g and inner almond weight is 1-1,5 g.
