Matbah-ı Amire, known as the kitchen structure of Edirne New Palace (Saray-ı Cedid-i Amire), is located in the southwestern part of the Tunca River, on the west side of the Fatih Bridge. The building, which is accepted to have been built in the middle of the 15th century during the reign of Mehmet II, reflects the characteristics of the period with its architectural features as well as its construction material and technique. Matbah-ı Amire, which has a rectangular plan extending in the east-west direction, is arranged in three sections.

The western part of the building is divided into four square spaces with pointed arches resting on square feet lined up in the east-west direction, and the two equally sized sections on the east side are divided into two square spaces. Each space is covered with a dome with pendentives. In the interior spaces of the building, there are four rectangular hearths made of brick, each with a rectangular hearth, and there are chimneys made of smooth cut stone as a continuation of these hearths. It is understood from the existing traces that there is a portico that covers the north and south facades of the building where rough hewn and rubble stones and bricks were used in the construction; the floor is paved with bricks and covered with a porch that probably rests on wooden poles. It is understood from the existing remains that the interior wall surfaces were plastered and no ornamentation elements were found.
